I’ll spill the beans…

If you’re looking for a fast and delicious meal from your pantry, I’ve got just the thing – Cheesy, Spicy Black Bean Bake! Perfect for Meatless Monday or any other time you want something reasonably healthy and quick. The recipe is another winner from the NYT and I bet you have all of the ingredients in your house right now. Unlike me who had to borrow a hunk of cheddar from my ex.

No worries – my Le Creuset cleaned up in no time after a soapy soak.

This dish goes together in minutes with minimal effort. The only prep required was slicing the garlic cloves, with measuring spices and opening cans the only other tasks necessary. I added some chopped scallions and a fan of avocado to finish, you know, to add some vegetables to the mix.

The recipe is supposed to serve 4, but I think that’s 4 not very hungry people. It was 3 servings in my house, but it could easily become a more substantial meal for a larger crowd by adding a salad, rice or maybe some tortilla soup on the side. Also, consider adding corn or sautéed peppers or onions to the bean mixture. Skies the limit with this one!
